Citric Acid
The sour secret of citrus fruits
Summary
Citric acid is the natural substance that gives fruits like lemons and oranges their characteristic sour taste. It is also used in the food industry as an acidity regulator and preservative (sold in Türkiye as "lemon salt").
In depth
Citric acid is a weak organic tricarboxylic acid. It is found naturally in large amounts in citrus fruits. In biochemistry it is a key intermediate in the "citric acid cycle" (the Krebs cycle), the heart of cellular energy production in all aerobic (oxygen-breathing) organisms. In the food industry it is widely used as an acidity regulator under the code E330.
